Asparagus with Mint Hollandaise 2 to 3 pounds jumbo asparagus 3 egg yolks. In a large pot of rapidly boiling water, blanch the asparagus for 3 minutes until dark green, then drain in a colander. Transfer to a platter and cover with a towel to keep warm. Fill the bottom of a double boiler with water and bring to a boil over high heat. Reduce the heat so the water simmers.

Whisk together the egg yolks and lime juice and turn into the top of the double boiler, then set over the simmering water. Whisk continuously until the eggs form thick ribbons, about 3 to 4 minutes. Remove the eggs from the heat and very slowly, a little bit at a time, whisk in the melted butter, being careful to fully incorporate each addition for 2 minutes.

When all the butter has been incorporated, whisk in the Tabasco and mint and serve the asparagus drizzled with the hollandaise. Open navigation menu.
